In The Kitchen: SKINNY EGG SALAD


In continuing with my "Weight loss" series I decided to show you guys a high protein/low carb friendly egg salad that I probably ate 3x a week (at least!) while I was attempting to lose weight (and still do now for maintenance :).  It tastes super indulgent and creamy and for anyone that's ever been on a diet you know "indulgent" & "creamy" don't EVER happen lol! This egg salad keeps me STUFFED.. I'll eat it for lunch and it'll usually prevent me from "foraging" my cupboards for a good 3 to 4 hours lol!

For the sake of this recipe I've also included the calories & carbs!

Ingredients:

1/4 Cucumber              - 17 cals & 4 Carbs
2 Hard-Boiled Eggs     - 160 cals & 1 Carb
1 Laughing Cow           - 35 cals & 1 Carb
1 oz. Ham                    - 30 cals & 2 Carbs
1 tsp Dijon Mustard     - 10 cals & 0 Carbs
1 tsp Sweet Relish        - 5 cals & 1 Carb
Paprika to taste            - 0 cals & 0 Carbs

Total                             - 257 cals & 9 Carbs


Cut your cucumbers into slices and dice your ham into small pieces.


Take your hard boiled eggs and dice that into small pieces as well.


Add in your Dijon Mustard, Sweet Relish & Laughing Cow Light Creamy Swiss


Add in your diced ham.


And mix the ingredients in the bowl together until they are combined. 

Note: The longer you mix the creamier the salad gets!


Sprinkle your paprika to taste!  

I like it spicy lol.  So mine's really red.  

Top you salad on your Cucumber slices and have at it!


With the Hubs lunch I put his on two slices of Whole Wheat White bread (he refuses to do wheat so we have to buy two types of bread in our house lol) which adds an extra 130 cals & 20 carbs.

If I'm eating Carbs that day I'll take ONE slice of 12 Grain Whole Wheat bread (extra 100 cal. & 15 carbs.) and then I'll pile my egg salad on top and eat it like an open faced sandwich.  Which really isn't that bad because you're still hoovering at about 350 a meal! :)

When you're picking your bread I've found the "denser" a bread feels it tends to make you full and STAY full much longer!  So pick the one that feels like a heavy brick lol!

  2. oh this look fab!!! Sounds really good too! And is there anything i can subtitute the laughing cowblabla...? I never heard of it in the US or maybe im just missing out? I dont know what exactly it is.. Something like cream cheese? btw thanks Lisa for recipe!

  3. This looks so yummy! I almost ALWAYS pick the egg yolk out and just eat a hard boiled egg white. I am tempted to give this a try on whole wheat bread. The other day I was thinking, Lisa you are the perfect example - you are gorgeous, dieting, exercising and still eating yummy foods! You are inspiring so many of us <3

  4. Oooh.. this looks so yummy. I am definitely going to try this. But I don't eat ham, so it will be okay to switch out the ham for equal amount of chopped up chicken breast, right?

  13. Ok, that looks super yummy! I had never thought of using a Laughing cow wedge for a egg salad but it sounds so good! and I'm just concerned because I don't see a side of broccoli on the side ;)
