In The Kitchen: SALMON FURIKAKE

I wouldn't necessarily call myself a "seasoned traveler" but I've traveled a bit and lived in a few different countries but no matter where I've been - Hawaii has the BEST food in the world.

I constantly find that I'm always missing Hawaii not just for the amazing people but because of the insanely delicious food. 

(Special shout out to Wei & Sk for sending me the original recipe for this.)


So I've tweaked this to what I could find in Germany as well as to my personal taste preference.

Ingredients:

3 - 4 pieces of Salmon
1 Cup Teriyaki Sauce
1 tsp Minced Garlic
1 tbsp Light Mayo
1 tsp Honey
Wasabi to taste
Pepper to taste
1 jar of Furikake

If you've been following along then you're familiar with my obsession with Furikake.  I only discovered it after I lived in Hawaii and now I always have a few (yes a FEW!) jars of it in my cupboard at all times.  It's amazing on spam musubi's, rice, noodles, congee.. I even put it on sandwiches sometimes lol!


PROOF lol!


Pre-heat oven 350 degrees F.

Place salmon on baking pan (I always use foil whenever baking anything because it makes clean up a snap.  Nobody wants to spend hours cleaning a dirty baking pan!)

Mix 1 cup Teriyaki with equal parts water and pour sauce over salmon

Bake for 15 min.


While the salmon is baking you can start on your "sauce"  

Take your mayo, wasabi & honey and put them a cup.


And mix together!

(You can omit the honey if you prefer but I'm personally obsessed w/ Kewpie mayo and since I can't get it in Germany I find that adding a little bit of honey in mayo is reminiscent of Kewpie mayo)


With a fork check to make sure that the salmon is "flakey" if so it's done!

I like to crack fresh ground pepper when it comes out piping hot from the oven. (You also might notice most of my recipes don't call for extra salt.  I rarely salt any of my foods when I'm eating at home.. I personally feel that we get enough salt whenever we eat out so I try to curb the salt intake when we eat at home as much as possible.. also the Teriyaki sauce and the Furikake both have salt in them so I think it's especially unnecessary in this case.)


This is just for presentation sake (and this is the Hubs portion if I'm eating rice I'll use a small cup) spoon rice into a bowl/cup and pack tightly.


Turn over on plate :)


I was going sans carbs tonight so it's salmon on a bed of mixed greens for me.


Take your mayo, wasabi & honey mixture and spoon it into a sandwich bag and cut a teeeny tiny hole in one corner.

(You don't have to do this but I prefer doing this then just smearing the mayo on the top)


And squeeze any which way you prefer over the salmon!


And sprinkle with as much or as little furikake as you please!


And that's it :)

  7. Oh my I can almost taste the salmon by reading your description. It sounds so good I must try this. Thank you for sharing Lisa. I have always on a lookout for different salmon recipe. Will have to buy Furikake next time while at Asian grocery store.
